Chun-Pi Chicken Recipe

Ingredients:

Marinate:
2 tbsp
1 tbsp
1 tsp

 

chicken (about 1 1/3 lb)
soy sauce
sherry (wine)
salt
star anise
dried red pepper
orange peel
brown peppercorns
sugar
sweet fermented rice
MSG
dark vinegar
sesame oil
oil
water

Methods:

  1. Clean chicken and remove the big bone. Then cut into large pieces and marinate with marinade for half an hour.

  2. Boil oil then fry the chicken meat in the oil for 3 minutes, remove.

  3. Heat 3 tbsp sesame oil, add star anise, dried red pepper, orange peel, and brown pepper corns, stir till brown. Add water, chicken meat, salt, MSG, sugar, soy sauce, sherry, and sweet fermented rice. Steam till dry, then add vinegar and 1 tbsp sesame oil, mix well and serve.

 

Note:

  1. This is a type of cold dish. It need not be served hot.

  2. "Chun-Pi" mean dried orange peel and may be bought in a Chinese drug store.
