Crispy Skin Chicken Recipe

Ingredients:

Mix pepper salt:
1/2 tsp
1/2 tsp
1 tsp

chicken (about 1 1/3 lb)
five-spice powder
salt
sherry (wine)
MSG
scallions (green onions)
ginger
maltose
white vinegar
lobster (dried) chips
pan oil
water

Directions:

  1. Clean chicken, remove feet and eyes.

  2. Mix 1/2 tsp five-spice powder, 1/2 tbsp salt, 1/2 tbsp wine, 1/4 tsp MSG, 2 scallions and 2 pieces of ginger, and rub chicken well. Put the scallions and ginger into stomach and close the opening with bamboo stick.

  3. Boil maltose with 1 1/2 cup water to dissolve, add 1/2 tbsp white vinegar and 1/2 tbsp wine. pour boiling liquid over chicken repeatedly, to make chicken skin appear white, remove and hang in windy place to dry for 2 hours.

  4. Stir-fry mix pepper salt in a clean, dry pan.

 

Methods:

  1. Heat oil to half boil, place chicken into the pan and deep-fry over low heat for 10 minutes till golden brown, remove and take scallions and ginger from stomach, cut chicken into bite-sized pieces and arrange as original chicken figure.

  2. Deep-fry lobster pieces, then set around the plate.

  3. Place pepper salt beside the serving plate and serve.
