Directions:
-
Clean chicken, remove
feet and eyes.

Mix 1/2 tsp five-spice powder,
1/2 tbsp salt, 1/2 tbsp wine, 1/4 tsp MSG, 2
scallions and 2 pieces of ginger, and rub
chicken well. Put the scallions and ginger into
stomach and close the opening with bamboo stick.

Boil maltose with 1 1/2 cup water
to dissolve, add 1/2 tbsp white vinegar and 1/2
tbsp wine. pour boiling liquid over chicken
repeatedly, to make chicken skin appear white,
remove and hang in windy place to dry for 2
hours.

Stir-fry mix pepper salt in a
clean, dry pan.
Methods:

Heat oil to half
boil, place chicken into the pan and deep-fry
over low heat for 10 minutes till golden brown,
remove and take scallions and ginger from
stomach, cut chicken into bite-sized pieces and
arrange as original chicken figure.

Deep-fry lobster pieces, then set
around the plate.

Place pepper salt beside the
serving plate and serve.
