Ingredients:

scallions
ginger

MSG

sherry (wine)
cornstarch

Directions:
-
Chop scallion and
ginger.
-
Blend minced pork meat with
chopped scallion and ginger, 1 tsp MSG, 2/3 tsp
salt, 1 tsp wine, 1/2 egg, 1/2 tbsp cornstarch,
stir and mix well for meat filing.

Heat the pan, brush with a little
oil, stir-fry egg juice mixture eggs which have
been beaten until lemon colored into 4 brown egg
sheets.

Add 1 tbsp water to 1 tbsp flour
and mix well as flour paste.

Methods:

Spread egg sheets,
wrap meat filling and roll up into long pieces.
Dip edge in flour paste and seal.

Warp 6 cup oil, place egg roll
in, deep-fry over low heat till golden brown,
remove and cut into bite-sized pieces, and
serve.

Place pepper salt on side for
dipping.
Notes:
-
Don't use too much salt to
marinate meat paste, because when we take the
egg roll, we need pepper salt to dip it.
-
This dish is needed in lunar New
Year Festival in Peiping therefore it is also called
"Spring Roll".
