Deep-Fried Fish with Ham Recipe

Ingredients:

Garnishing:
 

grouper
Chinese ham
slice toast
scallion
slice ginger
egg yolk
MSG
salt
sugar
black pepper
sherry (wine)
sesame oil
cornstarch
oil

tomato, a dash of parsley

Directions:

  1. Slice grouper into 24 slices (2 3/8 inches long, 1 5/8 inches wide and 1/4 inch thick) add 1/2 tsp MSG, 1/2 salt, 1/2 sugar, 1/4 tsp black pepper, 1 tsp wine, 1 tsp sesame oil, 1 egg yolk, 1 tbsp cornstarch, 1 scallion and 1 slice ginger to fish slices and mix well.

  2. Boil ham until soft and slice into 24 slices the same size as fish slices. Dredge ham in cornstarch.

  3. Slice toast into 24 slices the same size as fish slices and dip in cornstarch.

  4. Paste one slice fish meat and one slice ham on toast, dip in cornstarch and press it tightly as fish square.

 

Methods:

  1. Heat 6 cup oil 425 oF deep-fry fish squares over medium heat until toast appears golden brown, remove and drain.

  2. Garnish with parsley and tomato.
