Deep-Fried Fish Recipe

Ingredients:

2/3 lb
1/2 tsp
1/2 tsp
1/8 tsp
1/2 tsp
1/2 tsp
1 tsp
1/2

Batter:
1/2 lb
4 tbsp
1/2 tbsp
1 tbsp
1 cup

Pepper salt:
1/2 tsp
1/2 tsp
1 tbsp

For garnishing:

grouper
salt
MSG
black pepper
sesame oil
sugar
wine (sherry)
pan fried oil


flour (low protein)
lard
baking powder
cornstarch
water


five-spice powder
brown pepper powder
salt

4 slices lettuce, 1 chili
 

Directions:

  1. Cut grouper into pieces as 2 inches long and 1 inch thick, add 1/2 tsp salt, 1/2 tsp MSG, 1/8 tsp black pepper, 1/2 tsp sesame oil, 1/2 tsp sugar and 1 tsp wine, mix well and coat fish.

  2. Mix batter, stir slowly and put aside for 20 minutes.

  3. Shred lettuce.

Methods:

  1. Heat oil in a pan, dip fish in batter, then deep-fry fish till golden brown.

  2. Garnish with lettuce and chili.
     

  3. Serve with pepper salt.

  4. Mix pepper salt, stir-fry in a clean, dry pan.

 

Notes:

  1. Use low protein flour (pastry) to make fried powder.

  2. Mix batter slowly. The food will not be crispy if you stir the flour and water too quickly.
