Batter:

grouper

wine (sherry)
pan fried oil
flour (low protein)
lard
baking powder
cornstarch

five-spice powder
brown pepper powder

lettuce, 1 chili

Directions:
-
Cut grouper into
pieces as 2 inches long and 1 inch thick, add
1/2 tsp salt, 1/2 tsp MSG, 1/8 tsp black pepper,
1/2 tsp sesame oil, 1/2 tsp sugar and 1 tsp
wine, mix well and coat fish.

Mix batter, stir slowly and put
aside for 20 minutes.

Shred lettuce.

Methods:

Heat oil in
a pan, dip fish in batter, then deep-fry fish
till golden brown.

Garnish with lettuce and chili.

Serve with pepper salt.

Mix pepper salt, stir-fry in a
clean, dry pan.
Notes:
-
Use low protein flour (pastry)
to make fried powder.
-
Mix batter slowly. The food will not
be crispy if you stir the flour and water too
quickly.
