Directions:
-
Boil bamboo
shoot, then cool in water, split it, beat with
the blade of knife, cut into strips about the
size of a thumb.

Chop dried shrimps and Szechuan
cabbage.

Shred scallions.

Methods:

Deep-fry bamboo
shoot in 3 cup hot, 425 oF oil till
dry, then remove.
-
Stir-fry shrimps, Szechuan
cabbage, bamboo shoot in 3 tbsp oil, add 1/2 cup
water, 1/4 tsp salt, 1/2 MSG, 2 tsp sugar, 1/2
tsp sherry, and 1/2 tsp soy sauce, stir-fry
again over medium heat, sprinkle on 2 tbsp
scallion shreds and 2 tbsp sesame oil, remove
and serve.
