Ingredients:

herring (about 2 lbs)
slices onion diced
slices carrot, diced
dried black mushrooms
salt
sherry (wine)
flour
oil
parsley
salt
sugar
tomato ketchup
white vinegar
cornstarch

Directions:
-
Clean fish inside
and outside with salt. Cut back lengthwise and
remove bones. score crisscross from inside of
fish to surface, add 1 tsp salt, 1 tbsp wine and
dip it in flour.

Dice onions (about 5/8 inch long)

Peel carrot, boil and shred
(about 5/8 inch wide and 1/4 inch thick).

Soak dried black mushrooms in
warm water to soften and dice.

Methods:

Heat 6 cup oil in
the pan, deep-fry fish till golden brown, remove
and arrange in serving plate.

Heat 3 tbsp oil and stir-fry
onion, diced carrot, mushroom, add the combined
seasonings and bring to boil, add 1 tbsp oil,
mix and pour over fish and serve.

Garnish with parsley.
