Dried and Crushed Pork Recipe
The Food Processing's and Preserved Recipes

 

 

 

 


Ingredient:
 

1 1/3 lb
2 tbsp
1 tsp
2 tsp
1/2 tbsp
1 tbsp

lean pork (hind leg)
soy sauce
salt
sugar
flour
lard
 

Methods:

  1. Dried Pork : Remove the skin and vein of pork, place in a quart size pan filled with water, simmer over low heat till 1 cup soup remains. Remove. Pound pork with flour stick or crush by rolling while hot. Season the 1 cup soup with soy sauce, salt, sugar, add crushed pork in the pan, again simmer over low heat till liquid has evaporated.

  2. Crushed Pork : Stir-fry pork in a pan over low heat till loose and crisp. Add flour to crispy dried pork, stir-fry it over low heat till spicy, add lard, stir-fry it again till dry and thoroughly crisp, serve.

 

Notes: Any fish meat may be used in place of pork in same way, and is called "Dried and Crushed Fish".
