Mung Bean Sprouts Recipe

Ingredient:
 

2/3 lb

mung bean (small green beans)

Methods:

  1. Buy dry, clean and high quality, mung beans.

  2. Soak beans in bucket with plenty of water for 2-3 hours.

  3. Place beans in bamboo hamper which can drip water, cover with sacks. Put the hamper in dark place, pour water over it once every 1-2 hours and keep the temperature about 99 0F.

 

Notes:

  1. The water used to pour over the green small beans must be river or well water which has minerals to sprout the beans; tap water and steamed water will not work too well.

  2. The purpose of adding water is to provide moisture and to stabilize temperature.

  3. Be careful, don't let temperature increase especially on the 3rd-4th days when beans are sprouting.

  4. There is some sticky substance when sprouting in summer. Therefore add a dash of lime to prevent it.

  5. It is necessary to have enough water, moderate temperature for sprouting.
