Salted Egg Recipe

Saturation Method:
Ingredients:

20
1/2 lb
1/2 cup
1 1/3 lb
3 cup

duck eggs
salt
Kao-Liang wine
grass & wood dust
black tea liquid
 

Methods:

  1. Clean eggs, let air dry, place into a jar.

  2. Place salt, Kao-Liang wine, grass & wood dust and black tea together, mix evenly, then pour into the jar to saturate eggs thoroughly.

  3. Close jar and saturate eggs about 1 month. Cook and serve.



Mud coated Method:
Ingredients:

3 cup
1 cup
1/2
2 cup

red earth
salt
bottle sherry
black tea liquid
 

 

Methods:

  1. Clean eggs, let air dry.

  2. Put red earth and salt together, mix evenly, then add black tea liquid and sherry to earth to make a muddy paste.

  3. Coat eggs with muddy paste (about 3/4 inch thick).

  4. Place eggs into a jar for 1 month before using.
