Directions:

Peel garlic, then
crush.

Cut pork into long strips.
Marinate with 1/2 tbsp salt, 5 tbsp sugar,
garlic, scallion, soy sauce, sherry, five-spices
powder and red pigment in soup bowl, mix evenly,
then set aside for 1 hour.
Methods:

Heat oven, hang
the pork on the oven rack, which has been
marinated, then roast at 400 oF - 450
oF till golden brown (about 25
minutes) and serve.
Notes: Buy lean pork hind leg
(the rate is 80% lean pork to 20% fat pork).
