Roast Prawn with Yun-Tan

Ingredients:

For garnishing:

 

prawn (about 2 lbs)
black pepper
salt
MSG
yun-tan
soy sauce
egg

carrot, small cucumber, cabbage, parsley
 

Directions:

  1. Clean prawns (with shell), cut opening from back, score crosswise at centre, marinate with 1/4 tsp black pepper, 1/4 salt, 1/2 MSG, then brush prawns with yun-tan.

  2. Mix egg yolk with 1 tbsp soy sauce evenly, brush the head, tail and the shell parts, then arrange prawns on a roasting plate.

  3. Heat oven 400 oF, place in prawns and roast 10 minutes, remove and arrange on a plate.

  4. Garnish with cabbage shreds, small cucumber, parsley, lettuce, and carrot.

 

Note:

  1. This dish has a special spicy aroma. It is delicious for all occasions.

  2. Score prawns crosswise to keep from curling during roasting.

  3. Yun-tan is a kind of ketchup which is made from the sea-urchin, and may be obtained in your Chinese Grocery Store.
