Fish Slices with Sweet Fermented Rice Sauce Recipe

Ingredients:

grouper fillet (any large fresh fish meat)
egg white
salt
MSG
cornstarch
scallion
small pieces ginger
sweet fermented rice
sugar
soup stock
oil
wet wood ear (black fungus)

 

Directions:

  1. Cut grouper slantwise into pieces (about 3 1/2 inches long and 1 5/8 inches wide).

  2. Mix 1 egg white in fish, then add 1/2 tsp salt, 1/2 tsp MSG, 1/3 tbsp cornstarch, stir evenly.

  3. Chop scallion and ginger.

  4. Sweet Fermented Rice Sauce: Mix 1 1/2 tbsp sweet fermented rice, 3 tsp sugar, 1 tsp MSG, 1/2 tsp salt, 1 tbsp cornstarch and 1 cup soup stock in the bowl and stir evenly.

Methods:

  1. Heat 4 cup oil to 350 oF, drop fish in and deep fry until meat turns white (about 1 minute), then remove.

  2. Stir-fry scallion, ginger and wood ear in 1 tbsp oil, add sweet fermented rice sauce to the pan, bring to boil until gravy thickens.

  3. Place fish pieces in the pan, mix evenly with gravy and serve on a platter.

 

Notes: The best sauce is combined with sweet fermented rice, sugar, cassia flower and soup stock. It can be used with all sea food.
