Sautéed (Sauteed) Chicken with Oyster Sauce Recipe
Sautéed (Sauteed) Dishes Recipes

 

Ingredients
1 1/3 lb

1/2 cup
1/4 tsp
1/4 tsp
3 tbsp
1 tsp
1 1/2 cup
chicken meat
scallions
small piece ginger
cloves garlic
sherry (wine)
soy sauce
MSG
black pepper
cornstarch
meat tenderizer
baking soda
oyster soda
sesame oil
oil

Directions:

  1. Slice the chicken meat into pieces 4 inches long and 2 inches wide, marinate about 20 minutes in 1T wine, 1T soy sauce, 1t MSG, 1/8 t black pepper, 2T cornstach,1/4 t meat tenderizer and 1/4 t baking soda, stir well, and marinate 20 minutes.

  2. Cut 3 scallions slantwise, slice ginger, and chop the garlic.

  3. Marinade oyster sauce: 3T oyster sauce, 1/2 T soy sauce, and 1t sesame oil in a little bowl and mix well.

 

Methods:

  1. Put 3T oil into hot pan. Let it boil then remove from fire.
    Dredge chicken pieces in cornstarch (paste), arrange in the pan.
    Put the pan back on the fire sauté till both side are brown.
    Add remaining oil. Fry about 6 minutes in hot oil, then take out.

  2. Fry scallions, ginger, and garlic with 1T oil, add 1/2 T sherry, chicken and fry quickly over high heat. Take out immediately and serve.
