Methods:

Dissolve baking soda in a large
pot of boiling water, add beancurd noodle,
celery, and shredded carrot. Put the fire out,
but soak 5 minutes more then remove and put into
water.

Remove the cold beancurd
noodles, celery, and shredded carrot, drain and
rinse in cold water again, drain well then
marinated with 1 tsp MSG, 1 1/2 tsp salt, and 2
tbsp sesame oil, mix well and serve.
Notes: Soak beancurd noodle
with soda water to make it white and soft. Although
it keeps celery green, it may destroy vitamin B & C
; therefore it is better to soak celery with boiling
water. |
