Beancurd Noodles with Celery Salad Recipe

Ingredients:

1/3 lb
1/4
1 tbsp
1 lb
1 tsp
1 1/2 tsp
2 tbsp

celery
carrot
baking soda
beancurd noodles
MSG
salt
sesame oil

 

Directions:

  1. Wash and trim celery, then cut into sections (about 2 3/4 inches long).

  2. Shred carrot.

Methods:

  1. Dissolve baking soda in a large pot of boiling water, add beancurd noodle, celery, and shredded carrot. Put the fire out, but soak 5 minutes more then remove and put into water.

  2. Remove the cold beancurd noodles, celery, and shredded carrot, drain and rinse in cold water again, drain well then marinated with 1 tsp MSG, 1 1/2 tsp salt, and 2 tbsp sesame oil, mix well and serve.

Notes: Soak beancurd noodle with soda water to make it white and soft. Although it keeps celery green, it may destroy vitamin B & C ; therefore it is better to soak celery with boiling water.
