Directions:
-
Clean the shell of fresh abalone
with brush which has been dipped in a little
salt.
-
Peel and chop garlic, ginger,
red pepper, and coriander.

Shred cabbage and 6 scallions.

Methods:

Boil 1 cup water,
drop in 1 piece ginger, 4 scallions, 1 tbsp
sherry, 1 tsp salt and abalone and cook until
the meat curls a little, remove and soak in cold
water. Remove shell and the hard nose of head,
then place abalone meat back into shell.

Mix ginger, garlic, red pepper,
coriander, scallion shreds, 3 tbsp tomato
ketchup, 3 tbsp dark vinegar, 3 tbsp soy sauce,
2 tbsp white vinegar, 1 tsp MSG, 2 tbsp sugar, 2
tbsp sherry and 1 tbsp sesame oil in the bowl,
stir evenly as five spiced juice.

Shred cabbage and place on
serving plate, arrange abalone on top then pour
five-spiced juice over abalone.
