Prawns with Ketchup Recipe

Ingredients:

Garnishing:
 

prawns
baking soda
cornstarch
ginger
scallions
garlic
oil
water
sherry (wine)
salt
MSG

red pepper, small cucumber, scallion and ginger

 

Directions:

  1. Shell and clean prawns, cut each along back and remove green gland, split each prawn. Clean again with salted water, soak in 1 tsp baking soda for 1 hour, wash again with clean water, rinse and drain. Mix with 1 tbsp cornstarch.

  2. Shred ginger, small cucumber, red pepper, and scallion stem.

Methods:

  1. Stir-fry 2 scallions, 2 garlic, 3 slices ginger in 2 tbsp oil, season with 2 tbsp sherry, 1/2 tbsp salt, 1 tsp MSG, add 6 cup water, bring to boil.

  2. Drop prawns in the pan, boil 3 minutes, remove quickly, drain and place on serving plate.

  3. Garnish with the shreds of ginger, small cucumber, red pepper, scallion.

Notes: This dish is served with oyster oil and shrimp ketchup.
