Directions:

Cut sea cucumber
lengthwise into long strips (about 2 3/8 inches
long).

Slice scallion, ginger and
garlic.

Slice broiled pork.

Boil carrot and slice.
Methods:

Stir-fry
scallion, ginger, and garlic in 1 tbsp oil, add
1 tbsp sherry and 3 cup water to boil, blanch
sea cucumber 3 minutes to remove its strong
smell, drain off liquid.

Stir-fry scallion, ginger and
garlic in 2 tbsp boiling oil, add sea cucumber,
broiled pork, 1/2 tbsp sherry, 1 cup water, 1
tsp salt, 1/2 tsp MSG, 1/2 tsp sugar, 1/8 tsp
black pepper, 1 tsp sesame oil, 1 tbsp soy
sauce, and 1 tbsp hot soy bean paste to the pan
and cover it, bring to boil. Add carrot and snow
peas, then add 1 tbsp cornstarch paste to
thicken sauce and 2 tbsp oil, serve.
Notes: Cut sea cucumber slantwise to
give the appearance of quantity. |
