Simmering is steaming in a double boiler or pot. A large quantity of water is placed into the outer pot, while into the inner pot are placed the ingredients, seasonings and the required quantity of soup stock or water. The outer pot is tightly closed with a lid. The cooking is done over a comparative long period of time over either medium or low heat and the food is cooked by the transmission of heat of the water in the outer pot and the circulation of steam in the pot. The main difference between simmering and steaming is that steaming is carried out over high heat while simmering is done over low or medium heat. This method of cooking will preserve the original flavor of the food and will give a clear delicious soup. |
