Directions:

Clean and rub
Pomfret inside and outside with salt, rinse
thoroughly and let dry. Score crisscross both
sides of Pomfret. Coat it with 2 scallions, 3
slices ginger, 1 tsp salt, 1 tsp MSG, 1 tbsp soy
sauce and 1 1/2 tbsp sherry for 40 minutes.
Methods:

Deep-fry Pomfret
over low heat in 6 cup warm oil, before
removing, change to high heat for a while.

Mix 3 tbsp rice, 2 tbsp tea
leaves and 1 tbsp sugar in an old pot; and place
Pomfret with plate on top. Heat pot. Cover
tightly and smoked 4-5 minutes over high heat.
Uncover and turn Pomfret over, baste with
remaining marinade; smoke another 10 minutes
till golden brown, remove and place in serving
plate.

Garnish with parsley, wax gambour
and scallion.

Place pepper salt and tomato
ketchup in a small saucer for serving dip.
Notes: Smoked chicken, duck, goose,
meat or egg is prepared the same way as smoked fish.
But when smoking, it will produce gas which is
harmful therefore don't eat too much. |
