winter melon (about 12-15 inches
long)
pork fillet
chicken meat
cornstarch
scallop
dried black mushrooms
lotus seeds
shrimps
Chinese ham
parsley

Directions:
-
Cut off one end of the winter
melon, remove seeds, and carve design in rind.
Blanch in boiling water.

Dice pork and chicken meat, mix
with 1 tsp cornstarch. Blanch in boiling water.

Steam scallop thoroughly and
tear into shreds.

Soak dried black mushrooms in
warm water, for 15 minutes, then dice.
-
Boil lotus seeds in lots of
water.
-
Clean shrimp, scald it in
boiling water.
-
Chop Chinese ham.
-
Pick parsley leaves.

Methods:
-
Place diced pork, diced chicken
meat, scallop, mushroom and lotus seeds in the
winter melon, add soup stock until nearly full,
season with 1 tsp salt, 1 tsp MSG. Steam 3
hours, then remove.

Add shrimp before serving.

Garnish with chopped ham,
parsley on cut edge of winter melon.
Notes:
-
Choose old winter melon.
-
Marinade diced pork and chicken
meat with cornstarch, then scald in boiling
water, to make the meat tender.
