shrimps

cornstarch

soup stock
green peas
glutinous rice cake

sherry (wine)

Directions:

Clean and dry shrimp, coat with
1/2 tsp salt, 1/3 egg white and 1 1/2 tbsp
cornstarch.

Combined seasonings in the bowl,
stir evenly.

Methods:

Heat 6 cup oil to 450oF,
drop in shrimp for a few seconds, remove and
place in a bowl.

Boil 4 cup soup stock with
combined seasonings and green peas. Mix 2 tbsp
cornstarch with 4 tbsp water then add to soup,
stir thoroughly then pour over shrimp.

Deep-fry glutinous rice cake in
very hot oil (450oF) till golden
brown, place in serving dish.

Pour shrimp over glutinous rice
cake and serve.
