Steamed Chicken with Scallions Recipe

Ingredients:

1

1/2 tbsp
1/2 tsp
1/2 tsp
1 tbsp
3 tbsp

chicken (about 2 2/3 lbs)
scallion stems
young ginger
salt
MSG
sugar
sherry (wine)
oil

Directions:

  1. Soak and rub chicken with marinated seasonings (2 scallions, 2 pieces ginger, 1/2 tbsp salt, 1/2 tsp MSG, 1/2 tsp sugar, 1 tbsp wine) about 1 hour.

  2. Shred remaining scallions and ginger, mix well.

Methods:

  1. Put 2 chopsticks on the steamer, place chicken (stomach up) on the chopsticks, then steam over high heat for 20 minutes. Remove and cut chicken into small pieces, lay on the plate in an original chicken shape.

  2. Sprinkle the shredded scallion and ginger on the top of chicken shape.

  3. Heat 3 tbsp oil in frying pan, with a large cooking spoon scoop up all heated oil and splash over chicken dish. Drain this oil back into pan and reheat. Repeat process a second time till chicken appears spicy.

Notes:

  1. The chicken must be freshly dressed with innards removed.

  2. Arrange the chicken slices flat to soak the remaining seasonings.
