Stewing and Stewed Dishes

 

Stewing is also called "red-searing" or "red cooking". In this method of cooking the ingredients are first deep-fried or stir-fried and then placed into a pot with a large quantity of water and heated for a long period of time with the lid closed, over low or medium heat. This will result in a thick soup with the ingredients being very tender. Because of the long time required in cooking, most of the nutritional elements have gone into the soup and thus the soup should not be discarded.
