Seasoning (combined):
1 tsp
1/2 tsp
1/2 tsp
1/8 tsp
1/2 tsp
1/2 tbsp
1/2 tbsp

soaked squid
chicken gizzards
broiled pork
pork kidney
bamboo shoot
carrot
pork (lean)
oil
scallion, shredded
ginger
green pepper, shredded
green bean sprout
tender scallions, slice into sections
shrimp
dried rice noodles
water



salt
MSG
sugar
black pepper
sesame oil
cornstarch
soy sauce

Directions:

  1. Shred squid, chicken gizzards, broiled pork meat, pork kidney (remove white vein).

  2. Remove the peel of bamboo shoot and carrot, then boil and shred.

  3. Shred lean pork marinate with 1 tsp cornstarch.

  4. Remove the head and tail of green bean sprout as silver sprout.

Methods:

  1. Blanch meat shreds, shrimp, squid, chicken gizzard, green pepper, and pork kidney in 4 cup oil for 1 minute, then remove.

  2. Deep-fry rice noodle in hot oil (400 oF) till brown, then set in the centre of plate.

  3. Stir-fry scallion, ginger shreds in 2 tbsp oil, then add all of ingredients into the pan and stir-fry again, add 1 tbsp oil remove and place on rice noodle and serve.
