tender scallions, slice into sections

Directions:
-
Shred squid,
chicken gizzards, broiled pork meat, pork kidney
(remove white vein).
-
Remove the peel of bamboo shoot
and carrot, then boil and shred.

Shred lean pork marinate with 1
tsp cornstarch.

Remove the head and tail of green
bean sprout as silver sprout.
Methods:
-
Blanch meat
shreds, shrimp, squid, chicken gizzard, green
pepper, and pork kidney in 4 cup oil for 1
minute, then remove.

Deep-fry rice
noodle in hot oil
(400 oF) till brown, then set in the
centre of plate.

Stir-fry scallion, ginger shreds
in 2 tbsp oil, then add all of ingredients into
the pan and stir-fry again, add 1 tbsp oil
remove and place on rice noodle and serve.
