small cucumbers

Directions:
-
Remove strings
from pork fillet, score pork both sides, then
dice into 3/4 inch slices, add 1/2 tbsp soy
sauce, and 1 tsp cornstarch, mix evenly.

Dice small cucumber; soak it with
pork dices in 3 tbsp boiling oil about 30
seconds.

Shred red pepper, scallion and
ginger.
Methods:

Stir-fry chopped
scallion, chopped ginger and red pepper in 1
tbsp oil, add 1 tbsp hot soy bean paste, then
add diced pork, small cucumber, stir-fry quickly
over high heat, add combined seasonings and 1
tbsp oil, remove and serve.
Note:
-
If chicken meat is used in place
of pork fillet, it is called "Diced Chicken with
Cucumber".
-
Score both sides of pork fillet, it
helps to retain seasonings.
