ginger
sherry (wine)

scallions, parsley for garnishing

Directions:
-
Clean and shell
shrimp with salt water, rinse and dry, add 1/2
egg white, 1 tbsp cornstarch, stir and mix
evenly.

Remove the seeds of green pepper
and red pepper and dice
-
Mince boiled peanuts.
Methods:

Heat 3 cup oil to 400
oF in pan, deep-fry
shrimp, diced green pepper and diced red pepper
in the pan for one minute, then
remove.
-
Stir-fry garlic and ginger in 1
tbsp oil, add 1/2 tsp wine shrimp, diced green
pepper and red pepper, and combined seasonings,
stir-fry quickly and evenly and add 1 tbsp oil,
remove and sprinkle with minced peanuts.

Garnish with parsley and
scallion shreds, serve.
