Fried Sweet Prawns Recipe
Stir-Fried Dishes Recipes

 


Ingredients

prawns
small piece ginger
garlic
scallions
hot soy bean paste
tomato ketchup
sweet fermented rice
salt
MSG
sugar
sherry (wine)
cornstarch
vinegar
sesame oil
oil

Directions:

  1. Remove the feet, beard, and vein of prawns, cut from back about 2/3 deep.

  2. Chop ginger and garlic, shred scallion.

Methods:

  1. Deep-fry prawns in 4 cup hot, 425 oF oil for 30 seconds, then remove.

  2. Scald and wash prawns in 1 cup boiling water, then remove.

  3. Stir-fry 1 tbsp hot soy bean paste, 2 tbsp tomato ketchup, 1 tbsp chopped ginger, 1 tbsp chopped garlic and 1 tbsp sweet fermented rice in 4 tbsp hot oil, then add 2 tbsp water, prawns which is marinated with 1 tsp salt, 1 tsp MSG, 1/2 tsp sugar and 1 tbsp sherry, boil over medium heat.

  4. Mix 1/2  tbsp cornstarch paste, 1 tbsp scallion shreds, 1 tsp vinegar and 1 tbsp sesame oil, stir evenly, add to mixture to thicken then remove and serve.

Notes:

  1. Fried sweet prawns is different from sautéed prawns.
