pig tripe
dried black mushrooms
bamboo shoot

Directions:
-
Split pig kidney,
remove white vein, quarter crosswise, shred into
large shreds.

Shred pork fillet into large
shreds, marinate with 1 tbsp water and 1/2 tsp
cornstarch.

Boil pig tripe till very soft
(about 1 hour), then shred.

Soak dried black mushrooms in
warm water to soften, then shred.

Boil bamboo shoot, then shred.
Methods:
-
Scald pig kidney,
pork fillet, pig tripe in 3 cup boiling oil for
30 seconds, remove.

Stir-fry mushroom shreds, bamboo
shoot shreds, then place above ingredients (step
1) 1 tbsp wine and combined seasonings, stir-fry
again, add 1 tbsp oil remove and serve.
