Squid Rolls Szechuan Style Recipe

Ingredients:

Seasoning (combined):
1 tsp
1 tsp
2 tsp
1 tbsp
1 tbsp
1 tbsp
1 tsp
1 tbsp

dried squids (soaked in baking soda)
dried red peppers, dice
garlic, peel & chopped
oil



salt
MSG
sugar
sesame oil
soy sauce
vinegar
cornstarch
water

Directions:

  1. Remove the head and feet of squid which has already been soaked in baking soda and water solution and expanded. Score inside surface lengthwise and crosswise in 2 3/4 inches long and one inch wide.

Methods:

  1. Heat 4 cup oil to 300 oF or boil, blanch squid in oil above 1 minute. remove immediately as each piece rolls up and drain.

  2. Stir-fry dried red pepper in 2 tbsp oil until peppers change color, add chopped garlic, squid and combined seasonings, stir-fry again quickly over high heat until evenly heated, transfer to plate and serve.
