Directions:
-
Remove the bones
of chicken, score the upper surface of chicken
meat, then cut the long pieces 2 inches long and
3/4 inch wide, marinate with 1/4 tsp salt, 1/3
tbsp soy sauce, 1/2 tsp cornstarch.

Slice the one end of scallion
about 2 tbsp, chop, 1 tbsp ginger and 3 tbsp
garlic.
Methods:

Heat 3 cup oil very hot, 450
oF, put the chicken pieces in the boiling
oil, 30 seconds and remove quickly, drain.

Boil 3 tbsp oil, add 1 tbsp hot
soy bean paste, 2 tbsp shredded scallion, 1 tbsp
chopped ginger and 1 tbsp chopped garlic,
stir-fry evenly, put chicken pieces and combined
seasoning juice in and stir-fry quickly and
thoroughly over high heat, add 1 tbsp sesame
oil, remove and serve.
