Stir-Fried Duck Intestine with Celery Recipe

Ingredients:

2 lbs

1 1/3 lb
1/2
1/2 tsp
1/2 tbsp
1/2 tsp
3 tbsp

duck intestine
a dash alkali (soda)
celery
red pepper, chopped
salt
sherry (wine)
MSG
oil

Directions:

  1. Turn duck intestine inside out with chopsticks and clean thoroughly. Soak in alkaline water 15 minutes, pare away the fat on intestine, drift it in water evenly to remove alkaline juice and to make intestine crispy.

  2. Boil intestines in boiling water till color changes, remove immediately and drain.

  3. Remove celery leaves, keep the stem and cut into sections.

Methods:

  1. Boil 3 tbsp oil, add celery stem, chopped red pepper, intestine and 1/2 tsp salt, stir-fry quickly over high heat, then pour 1/2 tbsp wine with 1/2 tsp MSG, stir-fry thoroughly and serve.
