Directions:

Cut eel 2 3/8
inches long.
-
Cut celery 1 5/8 inches long.
-
Slice ginger in diamond shape.
-
Slice red pepper slantwise.
Methods:
-
Heat 3 cup oil to 425 oF
in the pan, place eel meat in and deep-fry 30
seconds, then remove.
-
Stir-fry ginger slice, red
pepper slice and hot bean paste with 2 tbsp oil.
Add celery, fry until tender, then put eel and
combined seasonings in, stir-fry quickly for a
while, remove and serve.
