Directions:
-
Split pig kidney,
remove white vein, score outer side lengthwise
and crosswise and cut into slices (about 2 3/8
inches wide). Marinate with 2 cloves garlic, 2
pieces ginger, 1 tsp salt, 1/2 tbsp wine 10
minutes, then blanch in boiling water only until
color changes to white, remove.

Boil carrot, bamboo shoot; score
and slice into pieces.

Cut green pepper in diamond
shaped pieces.

Soak wood ears in warm water,
slice into small pieces.
Methods:
-
Boil 3 cup oil, deep-fry kidney
and wood ears fungus for 5-10 seconds in the
boiling oil and remove.

Stir-fry scallion, ginger and
garlic in 1 tbsp oil, add green pepper, carrot
and stir again, put kidney, 1 tbsp wine and
combined seasonings into the pan, stir-fry over
high heat. Sprinkle with 1 tbsp oil and remove,
serve.
