Stir-Fried Kidney Recipe

Ingredients:

Seasoning (combined):
1/2 tsp
1/2 tsp
1/8 tsp
1 tsp
1/2 tbsp
1/2 tbsp
1 tbsp

pig kidney
garlic, slice
small piece ginger, slice
salt
wine
carrot
bamboo shoot
green pepper
wood ears (dried fungus)
scallion, cut into sections
oil




MSG
sugar
black pepper
sesame oil
cornstarch
soy sauce
water

Directions:

  1. Split pig kidney, remove white vein, score outer side lengthwise and crosswise and cut into slices (about 2 3/8 inches wide). Marinate with 2 cloves garlic, 2 pieces ginger, 1 tsp salt, 1/2 tbsp wine 10 minutes, then blanch in boiling water only until color changes to white, remove.

  2. Boil carrot, bamboo shoot; score and slice into pieces.

  3. Cut green pepper in diamond shaped pieces.

  4. Soak wood ears in warm water, slice into small pieces.

Methods:

  1. Boil 3 cup oil, deep-fry kidney and wood ears fungus for 5-10 seconds in the boiling oil and remove.

  2. Stir-fry scallion, ginger and garlic in 1 tbsp oil, add green pepper, carrot and stir again, put kidney, 1 tbsp wine and combined seasonings into the pan, stir-fry over high heat. Sprinkle with 1 tbsp oil and remove, serve.
