chicken livers
sherry (wine)

garlic stems, cut into section
celery, cut into section

Directions:
-
Slice pig livers
and chicken livers (quarter every one), marinate
with 1 tsp wine and 1 tsp cornstarch.
Methods:
-
Heat 3 cup oil to 300 oF
or boil, blanch chicken and pig livers in oil,
remove.
-
Stir-fry ginger, garlic,
scallion and celery in 2 tbsp oil, add chicken &
pig livers. Add 1 tbsp wine and combined
seasonings to the pan, and stir-fry again.
Sprinkle with 2 tbsp oil, remove and serve.
