Stir-Fried Scallop with Shrimp Paste Recipe

Ingredients:

Seasoning (combined):
1 tbsp
1/2 tsp
1 tsp
1/2 tsp
1 tsp
1/2tsp
1 tbsp

scallop
baking soda
cornstarch
bamboo shoot
carrot
green pepper
scallion, chopped
small piece ginger, chopped
garlic, chopped
sherry (wine)
oil




shrimp paste
MSG
sugar
black pepper
sesame oil
cornstarch
water

Directions:

  1. Slice scallop marinate with 1 tsp baking soda, soak 1 hour. Clean with clear water, rinse and drain, then add 1/2 tbsp cornstarch, stir evenly.

  2. Boil bamboo shoot and carrot, cut into flower shape.

  3. Cut green pepper into pieces in diamond shape.

Methods:

  1. Deep-fry scallop, green pepper, carrot and bamboo shoot in 3 cup boiling oil about 1 minute.

  2. Stir-fry scallion, ginger and garlic in 1 tbsp oil, add above ingredients (step 1), 1 tbsp wine and combined seasonings into the pan, stir-fry over high heat. Sprinkle with 1 tbsp oil and remove, serve.

Note: Soak fresh scallop with baking soda to make it tender.
