Stir-Fried Shark's Fin with Egg Yolk Recipe

Ingredients:

2/3 lb
2 slices
2
1 clove
1 tbsp
1 oz

1 tsp
1/2 tsp
1 tsp
3 cup
2 cup

shark's fin (pre-soaked)
ginger
scallions
garlic
sherry (wine)
rice noodles
egg yolks
salt
MSG
sesame oil
oil
water

Directions:

  1. Tear shark's fin into small strips. Stir-fry it with ginger, scallions, garlic and 1 tbsp oil over medium heat for 2 minutes, then add sherry and 2 cup water, boil for one minute to remove the strong smell, drain off water.

  2. Deep-fry rice noodles until crisp, drain and set in the center of plate.

Methods:

  1. Mix fin with 10 egg yolks, 1 tsp salt, 1/2 tsp MSG, and 1 tsp sesame oil, stir evenly.

  2. Heat 2 tbsp oil in pan, then add the mixture above to stir-fry over medium heat quickly, sprinkle 2 tbsp oil, stir-fry again till egg yolk is cooked, remove.

  3. Place on top of the deep-fried rice noodles.

  4. Serve.
