Ingredients:

shark's fin
(pre-soaked)
ginger
scallions
garlic
sherry (wine)
rice noodles
egg yolks
salt
MSG
sesame oil
oil

Directions:
-
Tear shark's fin
into small strips. Stir-fry it with ginger,
scallions, garlic and 1 tbsp oil over medium
heat for 2 minutes, then add sherry and 2 cup
water, boil for one minute to remove the strong
smell, drain off water.

Deep-fry rice noodles until
crisp, drain and set in the center of plate.
Methods:

Mix fin with 10 egg yolks, 1 tsp
salt, 1/2 tsp MSG, and 1 tsp sesame oil, stir
evenly.

Heat 2 tbsp oil in pan, then add
the mixture above to stir-fry over medium heat
quickly, sprinkle 2 tbsp oil, stir-fry again
till egg yolk is cooked, remove.

Place on top of the deep-fried
rice noodles.

Serve.
