Stir-frying is uniquely Chinese and is most widely used method in Chinese cooking. Into a heated pan is added a small amount of oil and heated over an intense flame. The ingredients are them added and stirred quickly at high temperature. This is called stir-frying. This method of cooking will preserve the freshness and texture of the food, and because of the short time the food is in contact with heat, the nutritional values are not destroyed. In order to retain the texture of the food, it is beat not to stir-fry too many ingredients at a time. If there are too many ingredients and seasonings, the ingredients can first be blended together and the seasonings combined separately to save time. If the ingredients are really too much, they can be stir-fried in several batches in order to control the quality. |
