Apple Loaf Recipe

Ingredients

egg
bottled or homemade apple sauce
butter or margarine, melted
dark brown sugar
caster sugar
plain flour
baking powder
bicarbonate of soda
salt
ground cinnamon
grated nutmeg
currants or raisins
pecans or walnuts, chopped

Method:

  1. Preheat a 350F/180C oven. Line a 23 x 13 cm loaf tin with greaseproof paper and grease.

  2. Break the egg onto a bowl and beat lightly. stir in the apple sauce, butter or margarine and both sugars. set aside.

  3. In another bowl, sift together the flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg. Fold dry ingredients into the apple sauce mixture in 3 batches.

  4. Stir in the currants or raisins, and nuts.

  5. Pour into the prepare tin and bake until a skewer inserted in the centre comes out clean, about 1 hour. Let stand 10 minutes. turn out onto a rack to cool.

Makes 1 loaf
