Ingredients

50 g
30 g
285 g
2 tsp
1/2 tsp
1/4 tsp
115 g

egg
milk
vegetable oil
caster sugar
dark brown sugar
plain flour
baking powder
salt
grated nutmeg
cooked stoned prunes, chopped

Method:

  1. Preheat a 400F/200C oven. Grease a 12-cup muffin tin.

  2. Break the egg into a mixing bowl and beat with a fork. Beat in the milk and oil.

  3. Stir in the sugars. Set aside.

  4. Sift the flour, baking powder, salt and nutmeg into a mixing bowl. Make a well in the centre, pour in the egg mixture and stir until moistened. Do not over mix; the batter should be slightly lumpy.

  5. Fold in the prunes.

  6. Fill the prepared cups two-thirds full. Bake until golden brown, about 20 minutes. let stand 10 minutes before turning out. Serve warm or at room temperature.
