Prawn (Shrimp) Curry with Tomatoes Recipe
(Pazun Hin)

In Burma, large prawns (shrimp), are used to make this dish. If possible, try to use Dublin Bay or Pacific Prawns (king shrimp), but if these are not obtainable, then ordinary prawns (shrimp) may be used instead.

Ingredients

To garnish:

peeled prawns
shrimp-flavored soy sauce
salt
turmeric powder
vegetable oil
large onion, peeled and pounded
garlic cloves, peeled and crushed
piece of fresh root ginger, peeled and pounded
chili powder
tomatoes, roughly chopped
chopped coriander leaves
water

Method:

  1. Put the prawns (shrimp) in a bowl with the soy sauce, salt and turmeric. Mix well, then set aside.

  2. Heat the oil in pan, add the onion, garlic, ginger and chili powder and stir-fry until fragrant but not dry.

  3. Add the prawns (shrimp), tomatoes and coriander, increase the heat slightly, then cover the pan and cook for 5 minutes, Stir in water, lower the heat, cover and simmer for 10 to 15 minutes until the prawns are cooked and the water has been absorbed.

  4. Transfer to a warmed serving dish and garnish with coriander leaves. Serve hot.
