Soup With Fresh Greens Recipe

This is an everyday soup which is quick and very easy to make. The dried shrimps can be pounded at home or bought ready-powdered and the soup can be varied from day to day by adding different fresh green vegetables: watercress, sorrel, spinach, cabbage, pea leaves or mustard leaves.

Ingredients:

1.2 liters /2 pints

1/2 tsp
2 tsp
1tsp
225 g/2 oz

water
medium onion, peeled and sliced
garlic cloves, peeled and sliced
pounded dried shrimps
shrimp paste
soy sauce
salt
fresh green leaves, washed

Method:

  1. Put the water, onion and garlic in a pan and bring to boil. Lower the heat. then add the shrimps, shrimp paste, if using , soy sauce and salt. Stir well, then add the green leaves.

  2. Boil for 5 minutes, taste and adjust the seasoning, then pour into a warmed soup tureen. Serve hot.

Serves 4
