This is an everyday soup which is quick
and very easy to make. The dried shrimps can be pounded at home or
bought ready-powdered and the soup can be varied from day to day by
adding different fresh green vegetables: watercress, sorrel,
spinach, cabbage, pea leaves or mustard leaves.

water
medium onion, peeled and sliced
garlic cloves, peeled and sliced
pounded
dried shrimps
shrimp paste
soy sauce
salt
fresh green leaves, washed

Method:
-
Put the water, onion and garlic in a pan and bring to boil.
Lower the heat. then add the shrimps, shrimp paste, if using ,
soy sauce and salt. Stir well, then add the green leaves.

Boil for 5 minutes, taste and adjust the seasoning, then
pour into a warmed soup tureen. Serve hot.
