Dried Oyster and Sea Moss with Lettuce Recipe
 Chinese New Year Cuisine

 

 

 

 

Ingredients:

5 oz
1 oz
5 oz
4 slices
2 sprigs
1 tbsp
5 slices

Seasoning:
1 tbsp
2 tbsp
1/2 tsp
1 1/2 cups

Sauce:
1/2 tsp
1 tbsp
 

dried oyster
sea moss
lettuce
ginger
spring onion
rice wine
carrot


oyster sauce
light soy sauce
sugar
liquid from oyster


corn flour
water
pinch of sesame oil
pinch of pepper
 

Method:

  1. Wash and soak dried oyster for 1 hour, dish up. Set aside liquid.

  2. Fry ginger and spring onion with 2 tbsp oil. Add dried oyster and fry for a while. Stir in oil and seasoning. Switch to mild heat and stew for 20 minutes. Dispose ginger and spring onion.

  3. Soak and wash sea moss. Mix with 1 tbsp oil.

  4. Place carrot at the centre of a deep plate top with dried oyster. Arrange sea moss over dried oyster. Pour oyster liquid over. Cover with a plate and steam for about 1 1/2 hours. Drawn excess liquid. set aside. Turn content upside down onto plate.

  5. Blanch lettuce in water with oil and salt. Arrange on the side of plate. Bring liquid and sauce to the boil. pour over oyster. Serve.
