large yam (preferably purple variety)
eggs

Method:

  1. Slice glutinous rice cake into rectangles of about 2.5 cm x 5 cm(1 inch x 2 inch) with thickness of 0.625cm (1/4 inch).

  2. Peel yam and slice to match glutinous rice pieces. Steam until soft. Leave to cool.

  3. Beat eggs and blend in rice flour and pinch of salt. Stir until batter is smooth.

  4. Heat oil. Put 1 slice of cake and 1 slice of yam together and dip in batter. Fry until golden brown and crispy. Repeat until all cake, yam and batter are used up.

  5. Serve hot. Glutinous rice cake will soften to consistency of melted cheese.

Note : Glutinous rice cakes are round and brown in color. They are only available during Chinese New Year and can keep for a few months in the refrigerator.
