 Glutinous Rice Marbles in Sweetened Soup Recipe

Tang Chek is winter solstice

Ingredients

905 g/2 lb

115 g/4 oz
115 g/4 oz

glutinous rice flour
a little water
pinch of red coloring
pinch of yellow coloring
pinch of green coloring
water for granulated sugar
water for gula melaka
ginger, each 5 cm (crushed)
granulated sugar
gula melaka (palm sugar)

 

 

 

 

Method

  1. Mix flour with a little water at a time and knead. The dough must be damp but not wet and sticky. Separate dough into 2 portions, then divide 1 portion into 3 equal parts.

  2. Add red, yellow and green colorings to each of the 3 smaller portions. Knead well for even distribution of the colors. Leave the largest portion as white.

  3. Roll colored dough into little balls, the size of large peas. Roll white dough into marbles, double the size of the colored ones.

  4. Boil 1 lot of water with granulated sugar and 1 piece of crushed ginger. When boiling, add white marbles. Stir to separate them and continue to boil until cooked. Serve hot.

  5. Prepare palm sugar.

  6. Boil 1 lot of water with palm sugar and 1 piece of crushed ginger. When boiling, add all the colored peas. Stir to separate them and continue to boil until cooked. Serve hot.
