Ingredients

grass carp (about 2 lb)
pickled five vegetable, shredded
red chili, shredded
rice wine
crushed garlic
parsley
ginger
spring onion
vinegar
sugar
salt
stock
pinch of sesame oil
corn flour
water

Method:
-
Scrape scales, remove entrails and gill from fish.
Wash, pat dry and smear inside and outside with 1 tsp salt. Marinate
for 20 minutes.

Bring 1/2 pot of water to the boil. Add ginger and
spring onion. Bring to a boil. Put in fish. Lower heat and cook for
10 to 12 minutes until fish is cooked. Dish up, drain and place on
serving plate.

Sauté crushed garlic with 2 tbsp oil and dispose.
Add red chili and pickled five vegetables. Sizzle wine. Stir in
sauce. Bring to a boil. Add corn flour solution. Mix well and pour
onto fish. Serve.
