Longevity Flour Treads (Seh Jit Mee Sua) Recipe

A birthday breakfast Specialty for the Hokkiens

Ingredients:

Main:

Pork balls:
455 g/1 lb
1 tsp
1/2 tsp
1/4 tsp
1 tsp

Garnish :
3 cloves

bundles of flour threads (mee sua)
water for boiling flour threads
water for soup
pork ribs
salt
abalone
pig's liver
pig's kidneys


minced pork
corn flour
salt
pepper
garlic oil


garlic
shallots
cooking oil for garlic
cooking oil for shallots
coriander leaves
spring onions
red chilies
light soy sauce
preserved vegetable (tung chye)
pepper to taste
soft-boiled eggs (optional)

 

 

 

 

Method:

For garnish: to be prepared first, then put aside.

  1. Prepare garlic and shallot oil.

  2. Chop coriander leaves and spring onions finely.

  3. Slice finely fresh red chilies and mix in light soy sauce.

  4. Have tung chye and pepper at hand.

For pork balls:

  1. Mix minced pork with corn flour, salt, pepper and garlic oil. Blend thoroughly by hand.

  2. Oil palm of hand and roll minced pork into balls the size of marbles. Repeat until all minced pork is used up.

For main:

  1. Boil a pot of water and when boiling, put in flour threads (mee sua) 1 bundle at a time. Boil for 2 minutes and use a wire sieve to scoop out. Shape into a coil to represent 1 portion and place on a platter. Repeat for the other 5 bundle of flour threads.

  2. Boil 1.35 L/48 fl oz water and when boiling, add pork ribs and salt.

  3. Slice finely abalone and add to the soup. Boil for 1/2 hour.

  4. Slice thinly pig's liver. dip into soup for 2 minutes. Scoop out and put aside on a plate.

  5. Cut kidney into 2 and discard impurities at the centre. Slice slantwise. dip into soup for 5 minutes. Scoop out and put aside on a plate.

  6. Add pork balls into soup and boil until cooked. Pour soup into a large, deep casserole and serve.

  7. To serve, set table with garnish (each on a little sauce), flour threads, liver and kidney. put 1 portion of flour thread in a bowl and scoop soup into it. select meat and garnish desired and add them into bowl. Add one soft-boiled egg for each bowel (optional).
