A Chinese New Year Cantonese Specialty.


Ingredients

fatt choy (dried seaweed)
dried mushrooms
water
a little oil for sauce
abalone
dried oysters
garlic
ginger
lettuce
salt (for blanching)
salt (for stewing)
cooking oil
corn flour
light soy sauce

 

 

 

 

Method:

  1. Rub dried seaweed with a little oil. Soak in hot water and clean while immersed in water. The impurities will stick to the oil and float to the surface. Too much water will wash away a lot of seaweed as it is very fine. Drain.

  2. Prepare dried mushrooms in 455 ml/16 fl oz boiling water. Strain water and save. Sauté mushrooms and put aside.

  3. Slice abalone finely

  4. Soak dried oysters and discard impurities. Sauté a little. Put aside.

  5. Chop garlic and crush ginger.

  6. Peel lettuce, leaf by leaf, and blanch with salt. Drain well. Make a bed of lettuce leaves on a platter and put aside.

  7. Heat oil, lower fire and fry chopped garlic and crushed ginger. Stir in mushrooms, abalone, oysters and salt. Add half mushroom water and allow to simmer for 15 minutes.

  8. Add seaweed and simmer for another 2 minutes.

  9. Mix corn flour with a little water and light soy sauce and add to the stew. Stir until it thickens a little. Pour onto bed of lettuce and serve.
