pinch of pepper

Method:

  1. Remove shells and intestines from prawns. Clean with salt, pat dry and dice. Mix with pinch of pepper and 1 tbsp oil. Sauté in warm oil. Dish up and drain.

  2. Scald green peas, carrot and button mushroom in hot water, drain. Mix with shrimp and seasoning. This makes the filling.

  3. Cut bean curd sheet into 6 round pieces. Clean with a damp cloth. Stuff on suitable amount of fillings and wrap to form lantern-shape. Fasten with shredded celery.

  4. Horizontally slice each pepper into 3 sections. Remove the core and seeds. Trim the cut surface of the top and bottom sections into jagged edges. Sit the middle section as base on the serving plate. On top of it, put the bottom section. Then the stuffed bean curd. Finally the top section. The arrangement will look like a lantern. Steam for 4 minutes. Remove the steam condensation.

  5. Heat wok. Add 1 tbsp oil. Sizzle wine. Stir in sauté. Bring to the boil and pour onto the prepared course. Serve.
