Stewed Pig's Trotter with Dried Halibut Recipe

Ingredients:

Seasoning:
1 tsp

trotters (about 2 2/3 lb)
dried halibut (about 3 oz)
head lettuce
ginger
eggs (boil and shred)


salt
sugar
light soy sauce
dark soy sauce
wine
star aniseed
 

 

Method:

  1. Clean pig's trotters and wash.

  2. Sauté ginger with 1/2 tbsp oil. Add water and bring to a boil. Put in pig's trotters (water should cover it) and cook for 30 minutes over low heat. Remove and pat dry.

  3. Mix 1 tbsp dark soy sauce and 1/2 tbsp honey. Brush mixture over pig's trotters. Marinate for about 10 minutes. Deep fry until the skin of pig's trotters turn golden brown.

  4. Wipe dried halibut with a damp cloth. Tear out the fillet and fried in warm oil. Remove and crush.

  5. Sauté both skin and bone of dried halibut and ginger with 1/2 tbsp oil. Add 5 cups of water and bring to a boil. Put in seasoning and fried pig's trotters. Stew for about 2 1/2 hours until tender. Dish up and poor original sauce on top. Sprinkle with crushed dried halibut.

  6. Blanch head lettuce in water with oil and salt. Arrange on side of plate. Garnish with egg shreds. Serve.
